Aristaenetus 1.10 (not Callimachus himself) preserves the narrative's most important element: Acontius was infatuated with Cydippe, so he tricked her by inscribing an apple, rolling it in front of her, and causing her thus to read aloud the writing: "'By Artemis, I will marry Acontius.' Even as she was going through it, and though it was both an unwilling and a suppositious expression of love, she felt ashamed and cast it away from her." (Nisetich trans.) Artemis, upon hearing the vow, held Cydippe bound to it.

Reid lists only a handful of occurrences of the myth prior to Bor:

poems by Skelton, Spenser, de Baussays; all operatic also Draghi's opera, libretto by N. Minato, 1671). This would be the earliest painting listed, if it's actually Cydippe. Indeed, of Reid's 13 entries for Acontius & Cydippe, none are graphic art.
